Healthy Colors: Fruits and Vegetables

Fruits and vegetables are abundant in the summer. With the huge quantity of delicious choices of fruits and veggies, it’s a great time to indulge. Recommendations are for five to nine servings of fruits and vegetables daily. But do you know that the colors of the produce indicate their health benefits?

Fruit Nutrients

Fruits and vegetables contain phytochemicals which are plant chemicals with protective or disease preventative properties. The plants use these for their own protection and furthermore these plant chemicals can benefit humans. There are over 1000 known phytochemicals. Among them are flavanoids found in fruits and vegetables, carotenoids found in fruit and carrots, and polyphenols in grapes. Most are antioxidants which indicate they protect cells form oxidative damage and cancer. Some are hormonal such as soy, which reduces menopausal symptoms and osteoporosis due to its interference with estrogen production. Garlic has anti bacterial properties,

Fruit Colors

Fruits that are red such as strawberries, cranberries, watermelon, and grapefruit and red vegetables such as tomatoes are rich with phytochemicals called lycopenes which protect against prostate cancer and heart disease.

The blue and purple fruits and veggies such as blueberries, plums and eggplant reduce the risk of cancer and are good sources of vitamin C and E. In addition, these are beneficial for healthy aging.

Cauliflower, pears, bananas, garlic, mushrooms, and onions, the white fruits and vegetables, contain allicin and selenium which help maintain healthy cholesterol levels and protect against heart and liver disease.

Carrots, oranges, and peaches, the yellow and orange colors, contain antioxidants (vitamin C) and carotenoids which protect against heart disease and cancer. These also aid your immune system.

The dark green fruits and veggies such as romaine lettuce, broccoli, kiwi and limes include phytochemicals that facilitate the building of strong bones and teeth and are good sources of fiber.

Not only are fruits and vegetables rich in phytochemicals but also contain vitamins, minerals, fiber and are low in saturated fat. Choosing five to nine servings daily of fruits and vegetables is an excellent way to help your body stay healthy. So fill your plate with color and color your self healthy.
